Master the technique of cutting a whole chicken into pieces with this easy step-by-step guide.
Place the chicken on a clean chopping board on a piece of paper towel to drain.
Start with the chicken, breast-side up. Use poultry shears or sharp kitchen scissors to cut the breast in half along the breastbone.
Open the chicken slightly and turn it breast-side down. Cut along one side of the backbone.
Cut down the remaining side of the backbone and discard the backbone.
Cut around legs, between the thigh and the breast.
To cut the drumsticks from the thighs, turn chicken piece skin-side down. Cut between the leg and the thigh using the small line of fat that runs between the two as a guide.
