PUMPKIN STUFFED WITH COCONUT VEGIES

Creamy and yummy

Baby pumpkins

2tbls oil

1 medium onion diced

2tbls korma curry

2tsp FIRETREE LIQUID SMOKE

200g broccochini

120g green bean cut into samll pieces

1 red capsicum diced

270g can of coconut cream

plain yoghurt

oil

 

Instructions

Preheat oven to 180C

Cut pumpkins in half horizontally

Scoop out seeds

Place pumpkins cut side up onto baking tray and drizzle with FIRETREE SMOKE OIL. Bake for 45 mins or just tender

Heat oil In large fry pan. Add onion and cook until tender. Add curry paste and cook 2mins

add broccochini, beans and capsicum. Cook for further 2 mins.

Pour in coconut cream and reduce heat . Simmer for 5 minsuntil vegetables are just tender.

 

Spoon vegetable mixtue into pumpkin halves and bake for 15 mins or until golden

Serve with yoghurt.
